Low-Carb Spaghetti
Ingredients:
--one large spaghetti squash
--one pound ground turkey
--one jar spaghetti sauce of your choice
--three cloves fresh garlic, chopped
--one half medium-sized white or yellow onion, chopped
--oregano
Directions:
To cook squash: Preheat oven to 350 degrees F. Use knife to make several holes in the squash. Cook for 30 minutes in preheated oven on ungreashed cookie sheet. Allow squash to cool so it is touchable. Cut in half and remove seeds with spoon. With a fork, grate the meat of the squash until it resembles cooked spaghetti.
For sauce: Brown the ground turkey in a skillet on medium heat (may differ depending on individual stove). Depending on how lean it is, you may want to use olive oil to avoid sticking to the pan. Add chopped garlic and onions. Add sauce and continue cooking on medium heat until sauce is warm. Stir occasionally. Season with oregono or other spices to desired taste.
Pour sauce over cooked squash as you would spaghetti and enjoy!
Guilt-Free Guacamole
Ingredients:
--one bunch asparagus
--one packet guacamole seasoning
--one cup low-fat cottage cheese
--one cup salsa
--one tablespoon lemon juice
Directions:
Boil asparagus until slightly cooked but not mushy. Allow asparagus to cool. In food processor, add asparagus and all other ingredients and blend together until smooth. Pour into bowl and allow to chill for several hours. For thicker guacamole, keep salsa aside and add to mixture at the end so the tomatoes and onions in the salsa stay in chunks. Tastes just like real guacamole with none of the guilt of avacado!
